High Fibre Gluten Free Ancient Grain Pancakes

Everyone loves pancakes! But who has the time to make them from scratch in this busy life?

Not all pancake mixes are created equal. Often gluten free pancake mixes contain a variety of refined flours, offering very minimal in the way of dietary fibre; an important nutrient for many components of human health, especially digestive health.

Choosing a brand of gluten free ancient grains pancake mix which offers a nutritious & tasty alternative to standard pancake mixes you'd otherwise find in the supermarket is an asset to your pantry; particularly for those with gluten-related health concerns.

This recipe is great for breakfast, lunch or a filling dessert;

Preparation time: 30 sec

Cooking time: 10 mins

Serves: 6 (x2 80g pancakes per serve. Shaker makes 12 pancakes in total)

Ingredients:

x1 shaker YesYouCan Ancient Grains Pancake Mix

x1 punnet 125g raspberries

x2 tbl maple syrup

300ml water

Method:

1. Preheat frypan and grease.

2. Shake shaker to remove clumps and loosen mix.

3. Add water to the 300ml mark, close the lid and shake the mixture for 1 minute.

4. Shake for 1 minute. Remove the lid to release pressure, then shake for another minute.

5. Pour batter into frypan and cook on each side for 1-2 minutes on medium heat.

6. Serve with maple syrup and raspberries.

NUTRITION TIPS:

💡Make your fibre intake go further and boost your protein intake by top pancakes with whatever other fruits (fibre) and nuts (fibre + protein) you can find in the house. Fresh fruit is always gluten free. Check for 'may contain' statements on packaging of plain/unsalted nut packaging.

💡Also try adding a dollop of Greek yoghurt for a boost of protein & calcium.
