Quick N' Easy Gluten Free Low FODMAP High Fibre Egg Free Choc Chia Brownies

Many gluten free baking products are low in fibre due to the nature of gluten free flours and increased processing to remove gluten.

But how about adding fibre? This recipe adds chia seeds instead of egg, boosting the fibre content to 10g fibre per serve of brownie.

Serves: 10-12

Serve size (finished): 50g

Preparation time: 10 min. Baking time: 20-25 min.

Ingredients:

  • 80g butter or margarine
  • 2.5 tbl black chia seeds
  • 5 tbl water
  • 1 pack YesYouCan Gluten & Dairy Free Choc Fudge Brownie Mix

Method:

1. Pre-heat oven to 160°C (fan-forced). Line a pan with baking paper or lightly grease.

2. In a mixing bowl, combine melted butter/margarine and chia seeds. Add baking mix and fold mixture with a wooden spoon until all combined. 

3. Pour batter into a slice pan and bake for 20 mins or until set. Remove brownie from the oven and allow to cool for at least 15 mins before transferring onto a cooling rack.

4. Allow brownie to cool completely before slicing. Use a sharp plastic knife for a clean slice.
